Paleo Egg Casserole

Want to share a recipe I made this week! It is paleo approved and very delis! ENJOY!!

Paleo Egg Casserole
1 pd of sausage
1 tsp baking power
1/2 c flax meal
10 eggs
2 bell peppers (I used a red and yellow one)
1 package of mushrooms
1 can of diced tomatoes (drained) (I didn't use tomatoes as it is just an option)

Brown meat. Add veggies. In seperate dish wisp eggs, baking power, and flax meal. Add sausage and veggies to egg mixture. Grease pan. Pour mixture into 13x9 pan. Bake 400 degrees for 15 minutes. Turn heat down 350 degrees for another 15 minutes.

  1. Just used 2 zucchini, one orange bell pepper, some green onions, canned tomatoes with chilis, cayenne pepper, and basil....

    We'll see how it goes.
